This is the fourth recipe I share with you .. and so far, also my favorite. Honestly, I did not really know what was Shawarma before starting producing my own mushrooms. So yes, I admit it. I know Shawarma just in its vegan version. But believe me, it is DELICIOUS with these mushrooms <3

Furthermore, you will find here also the instructions on how to prepare your own pita bread (if you do not want to buy it at the supermarket). You MUST use this bread for the mushroom Shawarma and for all the other delicious things you will manage to fit in your wrap!

Ingredients for 4 people: Preparation (30 min.) – Cooking (30 min.)

Ingredients Shawarma:

  • 450 gr of Oyster Mushrooms (better if the Pink ones)
  • Abundant Shawarma spices. You can find them already arranged in the supermarket or if you want to make the mix yourself they are: cumin, paprika, curcuma and nutmeg
  • 4 onions diced finely
  • Olive oil and salt

Ingredients for Pita bread:

  • 400 gr white flour
  • 300 gr water
  • 2 spoons olive oil
  • Salt

Examples of toppings:

  • Guacamole
  • Hummus
  • Vegan mayo
  • Tzaziki
  • Tomatoes
  • Salad
  • Cooked veggies
  • Boiled potatoes
  • .. and much much more!

Let’s cook!

 

First, strip apart the mushrooms with your fingers and put the strips in a bowl with olive oil, an abundant amount of Shawarma spices and salt. Mix well, the mushrooms have to soak the flavor of the spices and the oil. Let it rest.

Then, pour the water for the pita dough in a bowl, add the salt and then slowly the flour; mix with your hands until you get a smooth ball and then add 2 spoons of olive oil. Continue working the ball until it adsorbs the oil. Let it rest for 10 min.

Fry the onions in a pan with olive oil and then, add the mushrooms. Let it cook with a lid on for about 20-30 min. or even more if needed. You need to get properly cooked mushrooms, soft enough but still firm and chewy. The Shoarma is ready!

Finally, take the pita dough and divide it in 5-6 balls. Make the balls flat with the aid of a rolling pin or a bottle of glass (e.g. tomatoe sauce). Put a good pan on high fire and when is hot place the pita on it. When the pita is well cooked on one side flip it to the other.

Is finally, time to arrange your pita with the mushrooms and all the other veggies and toppings you love.
