This is finally the first recipe we share with you. First of many πŸ˜‰

This savory pie does not just look beautiful but it will surprise you for the richness of its taste <3

Ingredients for 4 people: Preparation (30 min + 30 min of rest) – Cooking (40 min)

Ingredients for the vegan dough (of course, you can also buy it already made in the supermarket!)

  • 150 gr wheat flour type “0”
  • 150 gr whole grain flour
  • 10 gr salt
  • 150 gr of water
  • 30 gr extra-virgin olive oil or sunflower oil

Ingredients for the filling

  • 400 gr Oyster Mushrooms ( a mix of Grey and Pink). Also possible with 40 gr of dried mushrooms.
  • 4 carrots (or other veggies)
  • 1 leek

Let’s cook!!

Let’s prepare the dough:

Pour in a bowl the flour, salt, oil, and water and mix with your hands until the dough looks and feels compact and soft. Make a ball with your hands and let it rest for 30 min covered with a cloth or piece of plastic. ** If you have dried mushrooms soak them now in water for at least 20 min.

Let’s prepare the filling:

Cut the leek in rings and fry it in a bit of oil. Cut the carrots into little cubes and add them to the leek. Cook for 10 min. adding a bit of water. Rip off the mushrooms with your hands (if fresh) or simply add the mushrooms you have soaked with water (if dried) and add to the pan. The veggies should be crunchy and non-over-cooked.

Let’s arrange the quiche

Now stretch the dough with a rolling pin or a glass bottle until it has a thickness of 4 mm. Put some flour on the working table and on the rolling pin itself. Put the vegetables and mushrooms inside.

Put in the oven at 180 degrees for 40 min. and Enjoy!
